Within every challenge, lies opportunity for growth and development… sometimes we just have to take the necessary steps to clear the noise, readjust our perspective and pivot in faith.

4. Beyond Ramen

Curry Chicken Lettuce Wraps

prep time: 10 min., cook time 30
serves: 4 people [or great for left overs!]

instant pot ingredients: 2 lbs boneless chicken breasts, sea salt, black + cayenne pepper, 2 tbsp. dry curry powder, 4 cloves of minced garlic, 1 tbsp. of minced ginger, 1 red onion, 1 tbsp. of ghee, 1 tbsp tomato paste, 2 tsbp. of lime juice, 1/2 cup of pure bone broth [chicken], 1/2 cup of full fat coconut milk

post instant pot ingredients: butter lettuce, creative toppings [cilantro, dried cranberry or chopped apple]

instructions

  • press the saute button on the instant pot and add ghee.
  • once hot, add the chicken, sea salt, pepper to your liking, curry powder, minced garlic and chopped red onion [5 min., stir to try and cook the chicken evenly on all sides]
  • then, press the off-cancel button and add the rest of the ingredients including the tomato paste, lime juice, bone broth, coconut milk [stir]
  • then, close the lid, seal the vent and press poultry [this will take about 15 min.], once the instant pot is finished, just let the pressure naturally release on its own
  • finally, adjust spices to your liking and serve on a butter lettuce wrap- feel free to add fresh herbs, like cilantro or even apple or dried cranberry if you like sweets to top and voila, you’ve taken another step to go beyond ramen!

5. Healthy Tip
Add spices intentionally to boost your immunity. Spices like the ones in the recipe above provide stability to the system and clear infection- making them incredible options to promote immune health. Turmeric paired with black pepper makes it even more bioavailable, cayenne clears, garlic wards off vampires and other pathogens, ginger provides a similar heat, etc., it truly doesn’t get much better than that! Food is medicine.
